But it’s a secret that deserves to be revealed. Formerly a member of The Proof Collective, Joe Alessandroni now operates Junior The Pocket Bar independently. It has moved to a larger, yet equally cozy, location on Ann Siang Hill.

It’s because the Keong Saik Road location was once known as The Old Man Singapore before changing its name at the beginning of this year after separating from its identically named Hong Kong counterpart. The new name was chosen because co-founder and owner Andrew Yap wanted to offer his Ernest Hemingway tribute bar a new beginning and the flexibility to go in any direction they wanted.
Additionally, Papa Doble now serves a cocktail bearing its name. It is based on Hemingway’s predilection for his Daiquiri to be served “without sugar and with double rum,” and it evolved into its drink, the Hemingway Daiquiri, after further additions of maraschino liqueur and grapefruit juice. Similar to this, Yap’s version follows the same format with the addition of green peppers.
